Psst…the secret is low-temperature dehydration. By removing much of the food’s moisture, things like mold find it difficult to grow and spoil the food. And the lack of moisture preserves the crunch, too!
Are Buckwheat Crunchies 100% ‘raw’?
Raisin Cinnamon and Dates and Spices are both 100% raw. Cocoa Bliss uses one non-raw ingredient, roasted cocoa, since we haven't been able to find an affordable and reliable source for raw cacao. We believe that cocoa retains many of its healthful properties through this moderate level of processing.
Where does the saturated fat in Buckwheat Crunchies come from?
The saturated fats come largely from the coconut and also from the nuts and seeds. While saturated fats have gotten a bad rap in the press, the scientific jury is still out on coconut as a whole food. It has been observed that some populations that consume a high proportion of their diet from coconut (up to 63% of their calories!) have no elevated risk for heart disease. Further, the saturated fat in coconuts is structurally different from saturated animal fats and our bodies may therefore process it differently. Our view is that coconut is a whole food that represents a nutritious package of fiber, iron, phosphorous and zinc in addition to some saturated plant fats.
What are the ‘natural flavors’ ingredients in Buckwheat Crunchies?
The natural flavors are natural flavor extracts, like almond extract, that you would find at a grocery store – no artificial chemical anythings!
Where do the other fats come from?
The other fats are mostly healthy nut fats!
Where do the sugars come from?
The sugars are primarily natural fruit sugars from the raisins and dates. Agave nectar, an unrefined low-glycemic sweetener, contributes just some of the sugars.

The glycemic index is a measure of how high your blood sugar rises after eating a given food. Higher blood sugar responses are linked with weight gain, diabetes, heart disease, and other chronic illnesses.
